Green Power Smoothie

Green smoothies evoke one of two feelings in people:

1. Gratefulness, for the nourishment it will provide.

2. Fear.

It’s mostly fear.

But it doesn’t have to be! I developed this kale-based smoothie after ordering a green smoothie that tasted a little too “healthy” (read: kale-y) than maybe most people would prefer. So I set out to create a kale smoothie that virtually everyone would enjoy!

The fruit makes it sweet with no bitter kale flavor. If you are new to green smoothies or are afraid to drink kale, then watch out – this is the gateway smoothie for you! You will soon be pushing this on your friends, too!

The Green Power Smoothie is easy to meal plan:

I meal-plan this smoothie by keeping many of the ingredients at my fingertips in the freezer. I keep kale, ginger, mango and banana the freezer, and the apples and oranges keep in the fridge for a couple weeks. You really can have this smoothie every day! It’s the most repeated smoothie in my kitchen and I give it all the credit for my good health and glowing skin! Besides just being vegan!

Fresh Ginger: Freeze fresh ginger in a baggie or container. No need to peel. When you are ready to use it, grate it directly in the blender jar with a microplane or box grater.

Kale: Yes, you can bring home a big bag of kale, wash and dry, and load it into gallon sized zip bags and freeze. No need to blanch first! If you have whole kale leaves, just trim off the big stems first. You can also use this kale for soups, too, but it’s salad days are over.

Bananas: Never toss-out a banana again – or force yourself to bake banana bread on a 95 degree day. Freeze those overripe bananas and preserve them at their sweetest. To make for easy measuring, slice each banana into 6 pieces – the best way to do this is to slice in half and then divide the halves into three pieces each and toss in a zip baggie or container. This way you will know that 6 frozen banana chunks equal 1 banana. And yes, when the temps are cool, you can thaw and use those bananas for that banana bread, too!

Mango: I once had a surplus of large mangos from a produce delivery.  I froze them all for this smoothie. Just dice and pre-freeze on a parchment-lined baking sheet for a couple hours until firm and then toss into a container. I recommend pre-freezing first so you aren’t left with huge frozen mango ball that you can’t do anything with.  Pre-freezing it will keep them separated in the container and easy to measure out.

With these meal prepping tips, you will be a successful green smoothie connoisseur – and the envy of your friends. Especially when you Instagram it! (Don’t forget to tag me!)

This is a protein powerhouse (if we were worried about such things), and do I even have to list the vitamins you are getting with this? I mean, citrus, super-foods like kale and hemp seed, apple, mango!

I drink this smoothie all year long, but I make sure to drink this often during the winter months for the immunity-boosting benefits.

Let me know in the comments if you tried this smoothie and be sure to share the love with your friends!

Happy drinking!

Prep Time 5 mins
Course Breakfast
Cuisine American
Servings 2

Ingredients

  • 2 cups kale
  • 1 apple, cored and chopped
  • 1 orange, peeled and sliced in half
  • 1 frozen banana
  • 1 heaping cup frozen mango
  • 1 cup water (plus 1/4 cup more for thinning)
  • 1 tablespoon hemp seeds
  • 1 tablespoon fresh ginger, grated

Instructions

  • Place all ingredients directly into blender or bullet blender. Blend adding more cold water if too thick. Blend until smooth. Might take a few minutes depending on your blender speed.
  • Pour into two glasses or jars and reap the benefits!

Notes

  • I haven’t convinced you that kale will solve all of your problems?  Use fresh spinach for this smoothie.  I won’t tell and neither should you!
  • A high-speed blender is best, but I have made this in a bullet-type blender and it worked well.
  • For measuring the kale, be sure to really pack it into the measuring cup, whether using fresh kale or kale you have frozen.
